Boodjidup Vineyard Viognier, the old growers trick of slicing a cane of bunches off the vine and setting the whole branch aside to dry and shrivel as the berries become engorged with flavour. The deliciously desiccated grapes are crushed and cold soaked to rehydrate the raisined fruit, pressed and sent for a month of vinification at a cool 15°C. Ferments are arrested to retain all the moreish sweetness and extraordinary complexity of cane cut Viognier. Apricot nectars, mango and lychee, her mouth watering lemon honey drop juicyness persists through to a wickedly flavourful finish.

The Wilyabrup subregion of Margaret River is widely acclaimed by industry pundits as the source of Australia's finest Chardonnay. Woodland's consuming ambition is to create wines which emulate the great vineyards of the world. There is less than a hectare of low yielding Chardonnay at Woodlands and output is highly limited. Woodlands is produced exclusively from Mendoza, the clone that made Margaret River famous for Chardonnay. Swan Valley based Sandalford have beeen making wine for over 150 years, changing their style and vinification throughout the passage of generations in many ways. During the 1970s, they developed a major new vineyard in Margaret River. Now one of the oldest, it is also one the largest, covering six hundred acres, the source of the most exceptional quality in mature vines Chardonnay. Oak barrel ferments, wild yeasts and time spent sur lies, a west coast Chardonnay of greater complexity for those who like a bigger, richer style.

Sandalford is designed to be fully fruit driven, completely Margaret River, refreshingly unoaked, classic and dry. The winemaking story goes back, way back to the 1840s as the second land title in all of Western Australia. In 1972 Sandalford broke out of their Swan Valley environs and established an estate vineyard along Margaret River, today it is one of the oldest and most salubrious. The exclusively free run juices of Semillon and Sauvignon Blanc are treated to a cool ferment on low solids, achieving an articulate expression of the enduring Classic Dry White.
